Paneer Bhurji Recipe

Ingredients:

  • 500g Paneer (crumbled)
  • 2 medium-sized onions (chopped)
  • 2 medium-sized tomatoes (chopped)
  • 2 green chillies (chopped)
  • 1 tbsp ginger-garlic paste
  • 2 tsp coriander powder
  • 1 tsp red chilli powder (for best taste, use Mathania Red Chilli Powder)
  • 1 tsp garam masala powder
  • Salt to taste
  • 2 tbsp oil (Use healthy Cold Pressed Groundnut Oil)
  • Coriander leaves for garnishing

Instructions:

  1. Heat oil in a pan over medium heat.
  2. Add chopped onions and cook until they turn golden brown.
  3. Add the ginger-garlic paste and cook for another minute.
  4. Add the chopped tomatoes and green chillies and cook until the tomatoes are soft and mushy.
  5. Add the coriander powder, red chilli powder, garam masala powder and salt. Cook for another minute.
  6. Add the crumbled paneer and cook for 2-3 minutes.
  7. Garnish with coriander leaves.

Ingredients:

  • 1 tsp amchur powder (dried mango powder)
  • 1 tsp chaat masala
  • Coriander leaves for garnishing

  7. Add the amchur powder and chaat masala and  cook for another minute.

 Paneer Bhurji Sandwich

Ingredients:

  • 4 slices of bread
  • 500g Paneer Bhurji (prepared as per the recipe above)
  • 4 cheese slices
  • Butter
  • Green chutney
  • Salt and pepper to taste

Instructions:

  1. Toast the bread slices until they are crisp and golden brown.
  2. Spread green chutney on two of the toasted bread slices.
  3. Put a cheese slice on each of the two bread slices with chutney.
  4. Spoon the Paneer Bhurji on top of the cheese slice and spread it evenly.
  5. Sprinkle salt and pepper on top.
  6. Cover with the remaining two slices of bread.
  7. Spread some butter on top of the bread slices.
  8. Toast the sandwich in a sandwich maker until the cheese has melted and the bread is golden brown.
  9. Serve hot.

Ingredients:

  • 2 tbsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala powder
  • 1 tsp red chilli powder
  • 1 tsp amchur powder
  • 1 tsp chaat masala

Instructions:

  1. Mix all the spices together in a bowl.
  2. Store the masala in an airtight container.
  3. Use as per the recipe instructions.
