Refined oils are extracted using high heat. Also known as hot-pressed oils, refined oils are made by first cleaning them, then grinding them at high speed, generating heat up to 200°C and using some chemicals, finally giving us the refined oil. On the other hand, cold-pressed oils are crushed slowly to extract oil from them. No heat is generated during the process. It also helps in retaining nutrients and flavors.
Cold-pressed oils are healthier than refined oils. Most of the nutritional capability of refined oil is lost after they are exposed to high heat and chemicals. The case is completely different in cold-pressed oils, which retain most nutrients because of a heat-free and chemical-free manufacturing process. Freshly sourced black mustard seeds, groundnut, coconut, and sesame seeds are wood pressed inside a wooden drum which is rotated by a shaft. Livestock helps to rotate the shaft which takes a reasonable amount of time and power.
Once the seeds are inside the drum, Seeds are slowly crushed at a low speed in such a way that nutrients remain intact during churning. The heat generated by churning is absorbed by the wooden drum. As wood is a good insulator of heat, so heat could not get transferred to the seeds so we term it cold pressed oil as the oil is extracted at low temperature.
