In a mixing bowl, combine fenugreek leaves, whole wheat flour, onion, green chili, turmeric powder, red chili powder, and salt.
Gradually add water to make a soft dough. Knead well and let it rest for 10 minutes.
Divide the dough into 6 equal portions and roll them into balls.
Take a dough ball, dust with flour, and roll it into a thick circle.
Heat a tava or griddle and place the rolled paratha on it.
Cook on both sides, applying ghee or oil, until golden brown spots appear.
Repeat the process for the remaining dough balls.
Serve hot with yogurt, pickle, or chutney.
