Ingredients
  

  • 1 lb chicken cut into pieces
  • 2 tbsp vegetable oil
  • 1 large onion finely chopped
  • 2 tomatoes chopped
  • 2 tbsp Madras curry powder
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • Salt to taste
  • 1 cup water
  • Fresh coriander leaves for garnish

Instructions
 

  • Heat oil in a large pot and sauté the onions until golden brown.
  • Add the tomatoes and cook until they are soft and mushy.
  • Add the chicken pieces and cook until they are browned on all sides.
  • Add the curry powder, turmeric, cumin, coriander, red chili powder, and salt. Mix well to coat the chicken.
  • Pour in the water and bring to a boil. Reduce heat, cover, and simmer for 30-40 minutes until the chicken is tender and the gravy is thick.
  • Garnish with fresh coriander leaves before serving.
