Ingredients
  

  • 1 lb chicken cut into bite-sized pieces
  • 1 onion finely chopped
  • 3 garlic cloves minced
  • 1- inch ginger grated
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions
 

  • In a large saucepan, heat some oil and sauté the onions until translucent.
  • Add the garlic and ginger, and cook until fragrant.
  • Add the chicken pieces and cook until browned on all sides.
  • Add the cumin, coriander, turmeric, red chili powder, salt, and pepper. Mix well.
  • Pour in the coconut milk and bring to a simmer. Cook for 20-25 minutes until the chicken is cooked through and the sauce is thickened.
