Ingredients
  

  • 3 tablespoons coriander seeds
  • 1 tablespoon cumin seeds
  • 3 dried red chilies adjust based on heat preference
  • 2- inch cinnamon stick
  • 4 –5 cloves
  • 5 –6 green cardamom pods
  • 1 –2 bay leaves
  • 1 star anise
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon black peppercorns
  • 1/2 teaspoon nutmeg grated
  • Optional: 1 tablespoon dried kasuri methi

Instructions
 

Step 1: Dry Roasting Spices

  • In a heavy-bottomed pan, add all the whole spices (coriander seeds, cumin seeds, dried red chilies, cinnamon stick, cloves, cardamom pods, bay leaves, star anise, fennel seeds, black peppercorns).
  • Roast the spices over low to medium heat for about 5–7 minutes until they become aromatic. Be careful not to burn them.

Step 2: Cooling Down

  • Once roasted, remove the pan from heat and let the spices cool completely on a plate.

Step 3: Grinding

  • Transfer the cooled spices to a spice grinder or blender.
  • Add grated nutmeg and optional kasuri methi if using.
  • Grind into a fine powder.

Step 4: Storing

  • Allow the ground spice mix to cool completely before transferring it to an airtight container.
  • Store in a cool, dry place or refrigerate for longer shelf life.
